Gluten-Free Mini Mila Muffins

1 – 16 oz. bag Namaste Gluten-Free Muffin Mix
2 eggs
6 Tbsp. canola oil
1 finely chopped vanilla bean
1 cup vanilla hemp milk
1/3 cup organic shredded coconut
1/2 tsp. cinnamon
4 ripe bananas
1/2 pint blueberries or fresh mango/pineapple
1/2 cup walnuts (optional)
1/2 cup MILA

Preheat oven to 325 F.Mix eggs, vanilla bean and canola oil.Add hemp milk, coconut, cinnamon, muffin mix & MILA.  Do not over mix.In a separate bowl, mash the bananas then fold into the batter. Add blueberries or fresh mango and walnuts.Grease the pans with butter (vegan butter if you want to go dairy-free). Spoon the batter into the muffin pans, 1/2 full for each muffin cup.  Top each one with a blueberry.Bake for 15 minutes.
